Pandemic Self Care: Pancake Thursdays

Somewhere in the last century that was the pandemic, Thursdays felt like even more of a hump than Wednesday-humpday.

So on a whim, as all good things begin, I made pancakes for breakfast one Thursday for my teen daughter and myself. And then again the next Thursday. And next. And after nine months of making pancakes on Thursday I realized I didn’t need to make her pancakes as she wakes up just in time for 9am school from her bedroom. I left her batter to make her own.
